simple meals: italian nachos
These Italian Nachos have become a Super Bowl staple at our house. They're delish - and simple enough to throw together on a weeknight!
serves 2-4
what you'll need:
a package of 5 mini pizza crusts (or pita bread, but I like the pizza crusts better)
olive oil
Italian seasoning
garlic powder
pizza sauce
8 oz mozzarella or provolone cheese, shredded
topping options (mix and match!):
1 lb bulk Italian sausage, browned
pepperoni
8 oz sliced mushrooms
banana peppers, sliced
1 small onion, chopped
sliced olives
what you'll do:
Preheat oven to 350 degrees. Cut crusts into generous triangles, and layer on a cookie sheet (it's ok if they overlap a little, but you don't want to heap them). Brush the crusts with olive oil and sprinkle with Italian seasoning and garlic powder. Bake in preheated oven for 8-10 minutes until crusts are crispier and starting to brown. Remove pan from oven. Change oven setting to Low Broil (or just Broil if that's your only option) and move the oven rack to the lowest position. Top crust triangles with a thin layer of cheese, then your toppings, then the remainder of the cheese. Return pan to oven and broil for 5-10 minutes - watch this closely so it doesn't burn. Remove pan when cheese is melted, bubbly, and golden. Serve with a side of pizza sauce for dipping. Enjoy!
